On the podcast, Dr V Mohan, diabetology expert, said Indians eat the same carbs as in 1970, but their quality has collapsed. Rice mills grew from 29 in the 1970s to three lakh today, all polishing rice into "pure starch" like glucose. Earlier hand-pounded brown rice kept fibre and protein. With less labour and junk food, today's carbs are dangerous.
