New natural coloured 'ruby chocolate' developed

The world's largest cocoa processor, Barry Callebaut, has developed the first new natural colour for chocolate since Nestlé developed white chocolate over 80 years ago. The Switzerland-based company calls the pinkish hue chocolate "ruby chocolate" and says it has been made using a special type of cocoa bean. It says the chocolate has a fruity, sour and sweet flavour.
