As temperatures soar across the district, one drink that refuses to fade from Ludhiana's highways is sardai. On the peripheral roads of Ludhiana -- Samrala, Doraha, and Khanna -- the sight is familiar: Roadside vendors, often Nihangs in their striking blue attire, ladling out earthen glasses of the thick, nutty concoction. Sardai is made from almonds and poppy seeds.
