Potatoes, rich in fast-digesting starch, can elevate glycaemic load. However, resistant starch in cooled potatoes, plus pairing with protein and fibre, moderates glucose response. "Red and waxy varieties with lower GI may support glycaemic control in type 2 diabetes when portioned and prepared appropriately," said Garima Dev Verman, certified diabetic educator.
