Baking soda vs baking powder: know the real difference

Baking soda and baking powder are both leavening agents used in baking, but they work differently. Baking soda needs an acidic ingredient to release gas, while baking powder already contains acid and activates with moisture and heat. They cannot be substituted equally, as soda is much stronger. Excess use may affect taste and health.
