Does coconut flour spike insulin?

Coconut flour is rich in fibre and lower in carbohydrates than refined wheat flour, which means it usually causes a slower rise in blood sugar and insulin levels, explains expert Dr Shikha. Since fibre slows carbohydrate absorption, foods made with coconut flour may have a gentler glycaemic effect when eaten in moderate portions.
