In 2019, I visited Food Hall PeddarRoad - Given that such delicate food (how does wastage stack up in the P&L?) (10 bushels of Asparagus were left. Will they all sell today?) - 80% of the crowd was in the cafe area. That’s a restaurant business with set margins. A cafe can’t subsidise spoilt Asparagus... (or can it?) Check link
