FSSAI has directed all states and UTs to ensure strict vigilance against the use of artificial ripening agents in seasonal fruits like mangoes, bananas, and papayas. These include calcium carbide (known as masala), ethylene, and other illegal agents, wax, and synthetic colours. "Masala poses serious health risks such as difficulty in swallowing, vomiting, skin ulcer, etc," the FSSAI order stated.
