'Halwa' is said to have originated from Arabic roots, which travelled to India during the Delhi Sultanate. The Ottoman and Byzantine Empires also played roles. When the Dutch introduced carrots to India, it led to the creation of the iconic 'gajar ka halwa' in Punjab, which has evolved into many regional variations today --- like Lucknow's black carrot halwa!
