New research shows the H5N1 bird flu virus can survive in raw milk cheese for up to 120 days, even when chilled or aged, raising safety concerns. The virus stays active in cheeses with moderate pH, like camembert, but not in highly acidic types. With dairy infections increasing, experts say current food safety guidelines urgently need updates.
