Samosa's history: Your favourite Indian snack isn’t Indian

The samosa is one of India's most loved snacks, but its story began far beyond the subcontinent. Historical accounts trace its early relatives to the Persianate world, with versions known as sanbosag, sanbusak and sanbusaj appearing in medieval records. Travellers and trade routes carried the snack to India, where local cooks transformed it with spices, vegetables and eventually potatoes.
