Scientists decode why elephant-poop coffee tastes smooth

Scientists from Japan have found that bacteria in Asian elephants’ guts break down pectin in coffee beans, reducing bitterness and giving rare Black Ivory Coffee its smooth taste. Normally, pectin breaks down during roasting to form bitter compounds. When gut bacteria lower pectin levels beforehand, fewer bitter compounds develop, resulting in the coffee’s distinctive flavour.
