Scientists find novel ways to make rare, healthier sugar tagatose

Scientists at Tufts University have developed a cheaper, high-yield method to produce tagatose, a rare sugar that tastes like regular sugar but has far fewer calories and minimal impact on blood sugar. Using genetically engineered bacteria and a novel enzyme, the process achieves up to 95 per cent yield, making tagatose a promising, diabetes-friendly sugar alternative.
