Sprouted potatoes: Safe to eat or better thrown away?

Sprouting increases glycoalkaloids like solanine and chaconine, which can cause gastrointestinal and neurological symptoms. These toxins concentrate in sprouts and green areas, and cooking does not fully eliminate them, making heavily sprouted potatoes unsafe. Store potatoes in a cool, dark place to prevent sprouting in the first place.
