The main course was inspired by Uttarakhand, featuring munsyari rajma gilawat, pahadi rice with jhangora and silky tomato-anari sauce, among others. Breads included taftaan and Kashmiri girda, while dessert featured a reinterpretation of Rasmalai Tres Leches.
