FSSAI said that reheating cooking oil releases harmful toxins, increases the percentage of trans-fats and gives rise to free radicals. Separately, ICMR said that repeatedly heating vegetable oils can increase the risk of cardiovascular diseases and cancer. "Storing 'used' oils for a long time should be avoided, as the rate of deterioration is high in such oils," ICMR said.
