Why should liquid formed over curd not be removed?

The liquid that forms over curd should not be removed as it is naturally occurring whey protein, orthopaedic surgeon and health educator Dr Manan Vora said. Discarding it actually reduces the overall nutritional value of the curd, he further said, adding that in its natural state, whey is rich in high-quality protein, calcium, potassium, and gut-friendly nutrients.
