Why do F1 drivers spray champagne during podium celebrations?

Champagne was first awarded in F1 in 1950 when Juan Manuel Fangio won the French Grand Prix, with drivers initially drinking it politely. The spray happened accidentally in 1966 when the champagne bottle popped when given to Jo Siffert at Le Mans 24 Hours. American driver Dan Gurney made it a tradition in 1967 by spraying it after his win.
