Repeated heating of cooking oil may increase cancer risk: ICMR

ICMR's dietary guidelines warned people against repeated heating of vegetable oils/fat. "Repeated heating of vegetable oils results in oxidation of PUFA, leading to generation of harmful/toxic compounds which may increase cardiovascular diseases and cancer risk," ICMR said. Vegetable oil once used for frying should be filtered and can be used to prepare curry, but not frying again, ICMR added.
