Researchers have found that tiny microbes involved in cheese-making not only give cheese its taste and texture but may also benefit gut health. A study by the University of Reading found probiotic bacteria and prebiotic compounds in traditional cheeses during the ageing process. Scientists said these microbes could support beneficial gut bacteria, though further research is still underway.
